Crisp as Sub-Zero Glaciers.
Explosive as West Coast Hops.
Meet Borealis Cold IPA: cold-fermented with clean Bavarian lager yeast at ale temperatures and dry-hopped at sub-zero frost with Citra Cryo & Nelson Sauvin. An ultra-dry, bone-crisp craft beer with zero syrupy heaviness.
Why the World Doesn't Need Another Hazy IPA
Traditional IPAs hit two extremes: either heavily bitter and caramel-sweet (old-school West Coast) or sweet, thick, and palate-fatiguing (modern Hazy/NEIPA). Borealis is the third way.
Fermented Cold, Fermented Clean
We ferment with pure Bavarian lager yeast (W-34/70) at 58°F under counter-pressure. This eliminates fruity yeast esters and heavy fusel oils, giving the beer a pristine, neutral canvas that showcases raw hop oils.
- Zero yeast esters or diacetyl
- Surgically clean palate clearance
- Laser-focused hop definition
Cryogenic Sub-Zero Dry Hopping
Hops are introduced at sub-zero temperatures using frozen nitrogen cryo pellets. Volatile aromatic terpenes (myrcene, linalool, geraniol) are retained without leaching harsh, astringent vegetative chlorophyll.
- Concentrated lupulin without grassy bite
- Citra Cryo + New Zealand Nelson Sauvin
- Pours radiant straw gold (4.2 SRM)
Toasted Jasmine Rice Adjunct
By combining 90% premium German Barke Pilsner malt with 10% toasted flaked jasmine rice, we achieve an extraordinarily dry finish (under 1.006 FG) with fine champagne-like effervescence.
- Ultra-refreshing, bone-dry finish
- Only 155 calories & 4.5g carbs
- No heavy aftertaste or fullness

Designed for the Modern Table
Because Borealis is bone-dry with champagne-fine carbonation, it bridges the gap between rich, fatty comfort food and delicate fresh seafood.
Charred Smash Burger with Sharp White Cheddar
Rich dry-aged ground chuck, caramelized onion crust, and sharp cheddar have high fat content that normally coats the palate. Borealis's 2.6 volumes of CO₂ and crisp 48 IBU act like a culinary laser, scrubbing the palate between every decadent bite.
Hops accentuate toasted bun sweetness while the cold lager finish resets your tastebuds for the next bite.

What exactly is a "Cold IPA" and how does it differ from a West Coast or Hazy IPA?
A Cold IPA is a modern brewing innovation. Unlike Hazy IPAs (which are thick, sweet, and low bitterness) or traditional West Coast IPAs (fermented with ale yeast and heavier crystal malts), a Cold IPA is fermented with lager yeast at ale temperatures with an adjunct grain like flaked rice. This produces an ultra-crisp, bone-dry body that allows explosive dry hops (Citra Cryo, Nelson Sauvin) to shine with laser clarity and zero malt syrupy heaviness.
Is Batch #001 ready now or is this a pre-order?
Batch #001 is currently entering cold conditioning and is scheduled for canning in Fall 2025. This landing page is an allocation reservation: you are securing your guaranteed claim on one of the 2,500 limited 4-packs. We collect zero payment today. You will receive an exclusive claim link 48 hours before general public release.
How does shipping and direct-to-consumer delivery work?
We ship in temperature-controlled, insulated cold-chain boxes with adult signature required (21+). We currently ship directly to 38 US states where direct craft brewery shipping is legally permitted. If your state is restricted, your reservation reserves taproom pickup at our Portland, OR and Denver, CO partner tasting rooms.
What makes Borealis sustainably brewed?
100% of our hops are certified Salmon-Safe from family-run farms in the Pacific Northwest and New Zealand. Our brewery runs on 100% renewable wind electricity, and 98% of our spent grain is repurposed with local organic cattle ranches and bakeries.
What is the shelf life and ideal drinking temperature?
For maximum terpene brilliance and crisp aromatics, drink within 90 days of canning and store refrigerated at 38–42°F (3–5°C). Pour into a stemmed tulip glass or Willi Becher at 42°F.
